Catskinner Cake - cooking recipe

Ingredients

2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
3 c. sugar
1 c. coconut
1 1/4 c. buttermilk
3/4 c. oil
3 large eggs
2 1/2 tsp. vanilla
8 oz. crushed pineapple
1 c. pecans
1/2 c. margarine
3 Tbsp. corn syrup

Preparation

Combine flour, soda, salt, 2 cups sugar, coconut, 3/4 cup buttermilk, oil, eggs and 2 teaspoons vanilla in a large mixing bowl.
Beat at medium speed for 5 minutes.
Stir in pineapple and nuts.
Pour batter in a greased and floured 13 x 9 x 2-inch pan. Bake at 350\u00b0 for 40 to 45 minutes or until a wooden toothpick inserted in center comes out clean.
