Ingredients

10 partially deboned quail
buttermilk to cover
cooking oil
3 c. all-purpose flour
3 Tbsp. cracked black pepper
1 Tbsp. salt
2 Tbsp. minced fresh thyme
Preparation

Rinse the quail in water, then place in a shallow pan and cover with buttermilk.
Refrigerate overnight.
