Melt-In-Your-Mouth Blueberry Cake - cooking recipe
Ingredients

2 eggs, separated
1-1/4 c. sugar, divided
1/2 c. butter
1/4 tsp. salt
1 tsp. vanilla
1-1/2 c. flour
1-1/2 c. fresh or frozen blueberries
1 tsp. baking powder
1/3 c. milk
Preparation

Beat egg whites with 1/4 c. sugar until they form stiff peaks; set aside.
Cream butter.
Add salt, vanilla and sugar, beat well.
Add egg yolks and beat until light and creamy.
Add flour and baking powder, then milk.
Fold in egg whites, then blueberries.
Pour into greased 8 inch square pan.
Sprinkle top lightly with sugar.
Bake at 350\u00b0 for 50-60 minutes.
This cake freezes well.
