Tuna Salad Plate(60 Servings) - cooking recipe

24 cans tuna
3 stalks celery
2 doz. hard-boiled eggs, chopped
2 large onion
1 1/2 qt. mayonnaise
dash of lemon juice
salt and pepper to taste
Preparation

Arrangement on plate:
Shreds 4 heads of lettuce.
Slice 14 tomatoes into 60 slices.
Cut 8 large peppers into 60 rings.
Make 60 radish roses.
Place the shredded lettuce on plate first.
Put the tomato slice on the shredded lettuce.
Place an ice cream scoop of tuna salad on top of the tomato.
Put some finely chopped egg around the base of the tuna.
Put a pepper rings on top of the tuna salad.
Garnish with a radish rose.
