Sausage-Eggplant Casserole - cooking recipe

Ingredients
    2 tsp. cracker meal
    2 finely chopped green onions and tops
    2 tomatoes
    1 medium eggplant
    1/2 tsp. oregano
    1 egg, beaten with 1 Tbsp. milk
    3/4 c. cubed Cheddar cheese
    1 lb. sausage, cooked and chopped
    1 c. buttered bread crumbs
Preparation
    Cook
    tomatoes and eggplant in salted water until soft. Drain. Mix with remaining ingredients, except cracker crumbs. Place
    in baking
    dish.
    Top with bread crumbs.
    Bake at 350\u00b0 for 20 to 25 minutes.
