Very Healthy Oat Muffins - cooking recipe

Ingredients
    3/4 c. oat bran
    1/4 c. ground flax seed
    1/3 c. whole-wheat flour
    1/3 c. unbleached flour
    1/4 c. chopped nuts
    1 Tbsp. baking powder
    1 egg, slightly beaten or 1/4 c. egg substitute
    1/3 c. unsweetened applesauce or pumpkin
    1 1/4 c. buttermilk (low-fat)
    1/4 c. maple syrup
    1 Tbsp. oil
    1 1/2 tsp. vanilla
Preparation
    In a large bowl, combine all dry ingredients. In medium bowl, combine liquids. Pour liquids over dry ingredients; stir until just combined. Spoon into 12 regular or 6 large muffin cups. Bake for about 20 minutes. Cool on a rack.
