Eggplant Casserole - cooking recipe
Ingredients

1/2 c. chopped onions
1/4 c. green pepper
2 Tbsp. oleo
1 medium cooked eggplant, pared and sliced
1/2 c. buttered bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1 c. grated American cheese
1 c. sliced olives
Preparation

Saute onions and green peppers in oleo in a skillet.
Add this to the eggplant.
Blend in salt, pepper and cheese.
Add the olives.
Pour into a 1-quart greased casserole dish.
Cover with bread crumbs.
Bake in 350\u00b0 oven for 30 minutes.
