Pork Chop Scalloped Potato Casserole - cooking recipe

4 boneless pork chops
1 large onion, sliced and separated
3 Tbsp. butter or margarine
1/4 tsp. pepper
1 c. chicken broth
2 Tbsp. vegetable oil
3 Tbsp. flour
1 tsp. salt
1 c. milk
4 potatoes, thinly sliced (approximately 4 c.)
Preparation

Brown chops in oil about 3 minutes on each side.
Remove, add onion rings to fat remaining in skillet.
Saute until tender, about 3 minutes.
Remove from heat and reserve.
Melt butter in a medium pan.
Stir in flour, salt and pepper.
Cook 1 minute, add milk and broth slowly.
Cook, stirring constantly, until sauce thickens and bubbles.
Remove from heat.
Arrange sliced potatoes and chops in buttered (or sprayed with Pam) dish about 11 x 7 x 2-inch.
Top with onion rings.
Pour sauce evenly over potatoes, chops and onions.
Cover baking dish.
Bake in moderate oven (350\u00b0) for 1 hour.
Uncover and bake 10 minutes longer or until chops and potatoes are tender.
