Eggplant Casserole - cooking recipe

Ingredients
    1 to 2 small eggplants
    2 Tbsp. butter
    1/2 c. onion, chopped
    1 can tomatoes or 5 small chopped fresh tomatoes
    1 tsp. salt
    1/4 tsp. pepper
    2 c. cornbread crumbs
    1/2 c. milk
    1/4 lb. grated Cheddar cheese
    1 stick oleo
Preparation
    Peel and saute eggplant in 2 tablespoons butter until tender. Drain and mash.
    Mix in order given.
    Pour in a baking dish.
    Bake until brown.
