Louise Cox'S Carrot Cake - cooking recipe

Ingredients
    2 c. grated carrots
    3 c. flour, sifted
    2 c. sugar
    1 1/2 c. Wesson oil
    1 small can crushed pineapple
    2 Tbsp. grated orange rind
    1 c. chopped nuts
    3/4 c. raisins
    1/2 c. coconut
    2 tsp. soda or 1 tsp. soda and 1 tsp. baking powder
    3 eggs
    2 tsp. vanilla
    1 tsp. cinnamon
    1/2 tsp. salt
Preparation
    Mix dry ingredients together and add salad oil, beaten eggs, grated carrots, crushed pineapple, orange rind, raisins, coconut and nuts.
    Beat 2 minutes at medium speed.
    Bake in oiled 15 x 11-inch pan at 350\u00b0 for 1 hour.
    Cut cake in 2 pieces and ice for layer cake.
