Spinach And Dill Rice - cooking recipe

Ingredients
    1 lb. fresh spinach
    3 Tbsp. olive oil
    2 cloves garlic
    2 tsp. salt
    1 tsp. dried dill weed
    2 tsp. white wine vinegar
    fresh ground pepper
    4 c. water
    1 1/2 c. long grain white rice
    1/2 c. firmly crumbled Feta cheese
    1/2 c. Parmesan
Preparation
    Mince spinach.
    Heat olive oil.
    Add spinach and garlic.
    Add salt, dill, vinegar and pepper.
    Cook over medium heat 10 minutes, stirring, all excess liquid should evaporate.
    Bring water to boil; add rice and salt.
    Cook 25 minutes.
    Add spinach and rice.
    Cook once more over low heat, 3 to 5 minutes.
    Toss cheese together and sprinkle over rice.
    Serve.
