Velvet Chicken With Mushrooms(Ginger Chicken) - cooking recipe

Ingredients
    2 whole chicken breasts, cut into matchstick like pieces (slightly frozen cuts easiest)
    2 Tbsp. soy sauce
    1/4 tsp. pepper
    3 Tbsp. cornstarch
    6 Tbsp. oil
    2 minced garlic cloves
    2 to 4 tsp. minced fresh ginger root
    1 (4 oz.) mushrooms, drained
Preparation
    Marinate chicken pieces in soy sauce, pepper and 1 tablespoon oil for 10 minutes.
    Heat remaining oil in skillet, add fresh garlic and fresh ginger; cook slightly (burns easily).
    Add cornstarch and cook slightly.
    Add chicken and cook.
    Add about 2 cups water.
    Cook, stirring constantly, until thickened and cooked.
    Add mushrooms.
    Serve over rice.
