Marinated Mushrooms - cooking recipe

Ingredients
    1 lb. small fresh mushrooms
    1 c. water
    2 tsp. salt
    1/2 c. distilled white vinegar
    1 bay leaf
    few thyme sprigs
    1 garlic clove
    2 Tbsp. olive oil
    sliced green onion or mild red onion (if desired)
    finely chopped parsley
    peel of 1 lemon, cut into thin strips
Preparation
    Trim mushroom stems.
    Wipe mushrooms with a cloth dipped in cold acidulated water (1 1/2 teaspoons lemon juice or distilled white vinegar to 2 cups water).
    Place mushrooms in a heatproof bowl.
