Green Peas With Tomatoes And Mint - cooking recipe

Ingredients
    3 Tbsp. olive oil
    3/4 c. chopped onion (fine)
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. coarsely chopped, seeded and peeled plum tomatoes
    2 (10 oz.) pkg. frozen green peas, thawed
    2 Tbsp. chopped fresh mint, basil or parsley
Preparation
    Heat oil in a large saucepan over medium heat.
    Add onion and cook 5 to 7 minutes, until golden brown.
    Stir in tomatoes and cook 3 minutes, then stir in peas, salt and pepper.
    Cover and cook 4 to 5 minutes, stirring once or twice, until peas are hot. Remove from heat.
    Stir in mint.
