Twice Baked Spuds - cooking recipe

Ingredients
    2 large baking potatoes
    1/4 c. buttermilk
    2 tsp. margarine
    1 green onion
    1/8 tsp. white pepper
    1 Tbsp. Parmesan
    paprika
Preparation
    About 1 1/2 hours before serving, bake potatoes in a 350\u00b0 oven until tender.
    Cool slightly, then halve each potato lengthwise. Scoop potato into a medium bowl, reserving skins.
    Thinly slice green onion, reserving some for garnish.
    With electric mixer, whip potatoes, buttermilk, margarine, green onion, pepper and a little salt, if desired.
    Spoon into potato skins.
    Sprinkle with Parmesan and paprika.
    Bake 20 minutes or until golden.
    Sprinkle with green onion.
    Makes 4 servings.
