Banana Currant Muffins - cooking recipe
Ingredients

1 c. white flour
1 1/4 c. whole wheat flour
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. 1% buttermilk
1/4 c. canola oil
2 mashed ripe bananas
2 egg whites
1 c. currants
Preparation

Combine flours, sugar, baking powder, baking soda, cinnamon and nutmeg.
In another bowl, combine buttermilk, oil, bananas and egg whites; add to dry mixture.
Stir until all ingredients are moist.
Fold in currants.
Fill paper-lined muffin cups 3/4 full. Bake at 375\u00b0 for 15 to 20 minutes or until done.
Cool and serve.
