Rice And Peppers - cooking recipe

Ingredients
    2 large red bell peppers, diced
    2 yellow onions, finely chopped
    3 c. cook brown rice (1 c. raw)
    1/2 c. extra-virgin olive oil
    2/3 c. golden raisins
    2 tsp. dry mustard
    2 tsp. Chinese five-spice powder
    1 tsp. chili powder
    1/4 tsp. ground cayenne pepper (increase to 1 tsp. if you like hot/spicy food)
Preparation
    Cook rice as directed on package.
    Put the oil in a frying pan and saute peppers and onions until soft, but not brown.
    Stir in all the spices and raisins, then mix with rice.
    Put in a covered casserole and bake 30-45 minutes, or until hot through. This dish is better if prepared the day before.
