Double Coconut Pie - cooking recipe

Ingredients
    pastry for single crust pie
    3 slightly beaten eggs
    1 1/4 c. sugar
    1/2 c. butter, melted
    2 Tbsp. lemon juice
    1 tsp. vanilla
    1 (7 oz.) coconut, flaked
    1 c. finely shredded coconut
Preparation
    Line a 9-inch pie plate with prepared pastry. Stir together eggs, sugar, melted butter, lemon juice and vanilla. Stir in the coconut (mixture will be thick). Spoon coconut mixture into pastry-lined pie plate. Bake in a 350\u00b0 oven for 35 to 40 minutes or until pie is set and top is golden. Makes 10 servings.
