Marinated Vegetables - cooking recipe
Ingredients

1 c. olive or vegetable oil
1/2 c. vinegar
1 large clove garlic, minced
1 tsp. dried oregano leaves, crushed
1/4 tsp. pepper
1 pkg. (16 oz.) fresh mushrooms
2 c. broccoli flowerets
2 c. cauliflowerets
2 c. red pepper, cut in 1 inch sq.
2 c. diagonally sliced carrots
Preparation

In a large bowl, combine first 5 ingredients.
Add remaining ingredients and toss to coat well.
Cover and refrigerate until serving time, at least 4 hours, stirring occasionally.
