Minted Confetti Cole Slaw - cooking recipe

Ingredients
    4 c. green cabbage, thinly sliced
    3 c. red cabbage, thinly sliced
    2 c. carrots, grated
    1 c. green onions, thinly sliced
    1/2 c. fresh mint, chopped
    1/3 c. olive oil
    1/3 c. white vinegar
    1 Tbsp. Dijon Style mustard
    2 Tbsp. sugar
    1/4 tsp. salt
    1/2 tsp. white pepper
Preparation
    In a large bowl, combine green and red cabbages, carrots, green onions and mint.
    In a separate bowl, whisk together oil, vinegar, mustard, sugar, salt and pepper.
    Pour dressing over vegetables and toss until coated.
