Banana Bread - cooking recipe
Ingredients

1/2 c. shortening
1 c. sugar
2 eggs (may use egg whites)
1 c. mashed ripe bananas
1 tsp. lemon juice
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt (optional)
1 c. nutmeats, chopped (optional)
Preparation

Cream shortening and sugar together.
Beat eggs (or egg whites) until light and add to shortening-sugar.
Mash bananas or press through sieve and add lemon juice.
Blend with creamed mixture.
Sift flour (unless presifted), baking powder and salt together and mix quickly into banana mixture.
Add nuts.
Bake in greased loaf pan in moderate oven (375\u00b0) about 1 1/4 hours.
Makes 1 (1 pound) loaf.
