Apricot Lemon Chiffon Muffins - cooking recipe

2 c. self-rising flour
1/2 c. sugar
2 eggs
1/2 c. lemon chiffon yogurt
1/2 c. apricot preserves
1/3 c. melted butter or margarine
Preparation

Preheat oven to 400 degrees. Combine flour and sugar. Stir to mix. Combine eggs, yogurt, preserves, and melted butter. Beat until well blended. Add to flour mixture and beat until well mixed. Spoon into well greased muffin tin, filling each cup 2/3 full. Bake for 13 to 18 minutes or until a toothpick comes out clean when inserted into center of one of the muffins. Makes 12 muffins.
