Hoppin' John - cooking recipe

Ingredients
    2 slices bacon, cut in half
    1 c. chopped onions
    2 garlic cloves, minced
    2 c. water
    1 (15 oz.) can black-eyed peas, drained
    1/2 c. uncooked brown rice
    1 bay leaf
    1/4 tsp. salt
    1/8 tsp. pepper
    1/4 tsp. hot pepper sauce
Preparation
    Cook bacon in a large saucepan until crisp.
    Remove bacon; drain on paper towels.
    In bacon drippings, cook onions and garlic until soft.
    Add water, black-eyed peas, rice, bay leaf, salt, pepper and hot pepper sauce.
    Bring to a boil.
    Reduce heat, cover and simmer for 1 to 1/2 hours or until liquid is absorbed and rice is tender.
    Remove bay leaf.
    Crumble bacon into rice mixture; stir.
    Sprinkle with fresh snipped parsley, if desired.
    Makes 4 servings.
