Fruit Tarts - cooking recipe

Ingredients
    4 oz. dried apricots
    1/3 c. crushed pineapple
    2 Tbsp. sugar
    1 tsp. lemon juice
    enough pastry for 9-inch double crust
Preparation
    Cook apricots until tender (about 30 minutes) . Mash or puree apricots; add rest of ingredients and bring to a boil. Cool.
    Roll pastry thin, cut 20 rounds (2 1/2-inch) with cookie cutter and 20 with a donut cutter of same size.
    Place a rounded teaspoon of filling on middle of each round.
    Moisten edge of pastry and seal donut rounds in place.
    Bake 15 to 20 minutes in 425\u00b0 oven.
    Other fillings may be used.
