Hoe Cakes - cooking recipe

Ingredients
    2 Tbsp. Crisco shortening or oil, divided
    1 1/2 c. self-rising cornmeal
    1/4 tsp. baking soda
    1 1/4 c. low-fat buttermilk
    1 egg, slightly beaten
Preparation
    Combine cornmeal and baking soda in medium bowl.
    Add buttermilk, egg and 1 tablespoon melted shortening.
    Stir just until mixture is moist.
    Heat 1 tablespoon shortening on medium- high heat in heavy, large nonstick skillet.
    Pour 1/4 cup of batter into skillet.
    Fry 1 to 2 minutes, or until golden brown on each side.
    Drain on paper towels.
