Hummingbird Cake - cooking recipe
Ingredients

1 1/2 c. vegetable oil
2 c. sugar
1 tsp. vanilla
2 eggs
3 c. self-rising flour
1 tsp. cinnamon
8 oz. undrained pineapple
2 diced bananas
1/2 c. flaked coconut
Preparation

Cream oil, sugar, vanilla and eggs together.
Sift flour and cinnamon together.
Fold in.
Fold in other ingredients.
Bake in a tube pan that has been greased and floured.
Bake at 350\u00b0 for 1 hour and 5 minutes.
Let sit in pan for 10 minutes; then turn out. Make a glaze of powdered sugar and water, thin enough for it to run down the sides of cake.
