Judy'S Applesauce Meatballs - cooking recipe

Ingredients
    2 lb. ground beef
    1 1/4 c. applesauce
    1 c. soft bread crumbs
    2 eggs
    salt and pepper to taste
    flour
    2 Tbsp. shortening
    1 stalk celery, thinly sliced
    1 green pepper, minced
    1 carrot, thinly sliced
    1 small onion, thinly sliced
    12 oz. can tomato juice
    8 oz. can tomato sauce
Preparation
    Mix beef, applesauce and bread crumbs.
    Add eggs.
    Season with salt and pepper.
    Shape mixture into small balls.
    Roll in flour and brown in hot shortening.
    Place meatballs in casserole dish, draining off excess fat.
