Cranberry Nut Loaves - cooking recipe
Ingredients

3 c. flour, sifted
1 1/2 c. sugar
3/4 tsp. salt
1 1/2 tsp. baking powder
3/4 tsp. baking soda
2 small eggs
3 Tbsp. butter, melted
1 c. heated orange juice from squeezed oranges
1 to 1 1/2 c. chopped pecans or walnuts
1 1/2 to 2 c. cranberries, halved
rind of 1 large or 2 smaller oranges, grated
Preparation

Sift flour, sugar, salt, baking powder and soda into a large mixing bowl to blend.
Whisk eggs to mix and add melted butter, heated orange juice and grated rind.
Blend and add to dry ingredients.
Mix just enough to blend.
Add cranberries and nuts; mix through.
Bake in 2 medium, well greased loaf pans (fill 2/3 full).
Bake at 350\u00b0 for 1 hour.
Test with toothpick.
This freezes well.
