Pineapple Mini-Pies - cooking recipe

2 1/2 c. white flour
1 tsp. salt
1/2 tsp. grated lemon peel
1 c. shortening
6 Tbsp. pineapple juice
15 1/4 oz. can sliced pineapple
1/4 c. brown sugar
1/4 tsp. cinnamon
3/4 c. confectioners sugar
3 Tbsp. lemon juice
Preparation

In a bowl, mix together flour, salt and lemon peel.
Cut in shortening with a pastry blender.
Add pineapple juice and mix to form dough.
Roll out to 1/8-inch thickness and cut rounds 1/2 inch larger than pineapple slice.
Cut 8 this size and, using a donut cutter, cut 8 more.
