Zucchini Casserole - cooking recipe
Ingredients

2 lb. zucchini, cut up
1 onion, chopped up
2 whole eggs
1/2 c. dairy sour cream
American or Cheddar cheese, shredded (amount depends on how you like cheese)
salt and pepper
cracker crumbs
Preparation

Cook zucchini in small amount salted water in covered pan for a few minutes.
Just before it gets well done, drain and whip in blender.
Blend in onion, eggs, sour cream and half the amount of cheese you want to use.
Salt and pepper to taste.
