Butter Beans And Ham - cooking recipe

Ingredients
    1 lb. large butter beans or baby lima beans
    1 (14 oz.) ham hock or ham shank
    2 medium size yellow onions (1 quartered, 1 finely chopped)
    3 cloves garlic, peeled
    2 bay leaves
    1 Tbsp. unsalted butter or margarine
    1 1/2 tsp. hot red pepper sauce
    1/2 tsp. each salt and black pepper
Preparation
    Half fill a large saucepan with water and stir in the beans, ham hock, the quartered onion, garlic and bay leaves.
    Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour or until the beans are tender.
    Drain the beans, reserving all of the liquid and discarding the onions, garlic and bay leaves.
    Transfer the beans to a bowl and the ham hock to a cutting board.
    Cut the meat into small pieces.
    Discard the bone.
