Seafood Gumbo - cooking recipe

Ingredients
    3 lb. shrimp, peeled
    1 qt. oysters, shucked
    1 lb. lump crabmeat
    1 c. bacon grease
    1 c. flour
    2 onions, chopped
    1 large bunch green onions, chopped
    1 bell pepper, chopped
    2 (16 oz.) cans tomatoes
    1 (6 oz.) can tomato paste
    10 c. water
    6 bay leaves
    6 Tbsp. Worcestershire
    3 1/2 Tbsp. salt
    1/4 c. parsley, chopped
    1 tsp. celery seed
    1/2 tsp. thyme
    1/2 tsp. tarragon
    1 Tbsp. black pepper
    1 Tbsp. red pepper
    2 (16 oz.) pkg. okra
    file powder
Preparation
    Heat
    the
    bacon
    grease
    in an iron pot until smoking. Stir in\tflour
    and
    make
    a
    dark brown roux by stirring over medium heat
    about
    45
    minutes.
    Add chopped onions and bell pepper and cook
    until
    limp.\tHeat
    10 cups water in a large pot, then
    add roux mixture to pot.
    Add all other ingredients except seafood and file powder. Simmer at least 3 hours.
    Add shrimp 20 minutes before serving and oysters and crabmeat 5 to 10
    minutes
    before serving.
    Serve
    in
    bowls\tover rice and sprinkle with file powder.
