Pizza Rice Skillet - cooking recipe

Ingredients
    1 Tbsp. butter
    1 1/2 c. shredded zucchini
    1 large onion, chopped
    2 c. boiling water
    1 c. converted rice
    3/4 tsp. Italian seasonings
    3/4 c. pizza sauce or tomato sauce
    12 slices salami or 3/4 c. cut up cooked chicken
    1 (4 oz.) can mushroom stems and pieces, drained
    1 (2.2 oz.) can sliced ripe olives, drained
    1 to 1 1/2 c. shredded Mozzarella or Cheddar cheese
Preparation
    In a 10-inch skillet, melt butter over medium-high heat.
    Add zucchini and onion and cook, stirring, until soft, about 5 minutes.
    Stir in boiling water, rice and Italian seasoning.
    Heat to boiling, reduce heat to low, cover and simmer about 20 minutes, until rice is almost tender.
    Spread pizza sauce evenly over rice, then arrange salami slices on top.
    Sprinkle with mushrooms, olives and cheese.
    Cover skillet and cook over medium heat about 5 minutes, until cheese is melted.
