Chicken Enchiladas A La Rhodes - cooking recipe

Ingredients
    1 whole chicken
    pot of water
    salt and pepper to taste
    1 whole onion
    corn tortillas
    hot oil to dip
    red chili sauce or enchilada sauce (we like Las Palmas)
    chopped onion
    grated cheese
    chicken meat
Preparation
    In a
    pot
    of water, place 1 whole chicken, making sure you have enough
    water to cover.
    Add 1 whole onion.
    Add some salt and
    pepper.
    Simmer
    until chicken is done.
    Meat should start to fall
    from
    the
    bones.
    Place
    chicken
    in a bowl to cool. Debone chicken
    and put meat in a pan.
    Cover with some red chili sauce and simmer for 10 minutes;
    let cool.
