Mixed Vegetable Pilaf - cooking recipe
Ingredients

2 Tbsp. margarine or butter
1 c. sliced mushrooms
1/4 tsp. dried basil
1 (10 oz.) can chicken broth
3/4 c. water
1 c. regular rice, uncooked
1 small zucchini, sliced thin
1/2 c. shredded carrot
Preparation

In skillet over medium heat, in hot margarine, cook mushrooms and basil 3 minutes, stirring occasionally. Add broth and water. Heat to boiling. Stir in rice. Return to boiling.
Reduce heat to low. Cover and simmer 15 minutes.
Stir in zucchini and carrots. Cover and simmer 5 minutes.
Remove from heat.
Let stand, covered, 5 minutes before serving.
