Italian Eggplant - cooking recipe

Ingredients
    2 eggplant
    1/2 c. flour
    1/2 tsp. salt
    1 (8 oz.) Mozzarella
    1/2 c. Parmesan
    1/8 tsp. pepper
    1/4 to 1/2 c. oil
    2 (8 oz.) tomato sauce or 1 large jar Ragu
Preparation
    Cut eggplant into 1/2-inch slices and sprinkle with salt, let stand 20 minutes.
    Pat dry.
    Dip each slice in the flour, salt and pepper.
    Fry in hot oil.
    Lay on paper towel.
    Pour 1/4 of sauce in a 2-quart casserole and layer with 1/3 eggplant slices.
    Repeat eggplant, sauce and cheeses.
    Cover and bake at 400\u00b0 for 20 minutes.
    Remove cover and bake 10 more minutes.
