Lemon Spread - cooking recipe

Ingredients
    3 eggs, beaten
    1 1/4 c. sugar
    2 Tbsp. grated lemon rind
    1/2 c. fresh lemon juice
    3/4 c. soft butter
Preparation
    Combine all, except butter, in small saucepan over low heat. Gradually bring to a boil (15 minutes).
    Cool.
    Beat in butter. Cover and chill.
    Good on muffins and crackers.
