Rainbow Bean Soup - cooking recipe

Ingredients
    4 cloves crushed garlic
    10 c. water or stock
    2 diced carrots
    2 c. crushed tomatoes
    2 chopped onions
    1 diced green pepper
    1 tsp. dried parsley
    1/4 c. lime juice
    1 tsp. chili powder
    1/4 c. chopped fresh cilantro
    1 bag various dried beans (10 bean variety)
Preparation
    Soak beans overnight; drain and put into soup pot with garlic and water or stock.
    Bring to boil; simmer for 1 1/2 hours.
    Add carrots; simmer 1 more hour.
    Add tomatoes, onions, green pepper, parsley, lime juice and chili powder.
    Cook for 30 minutes.
    Stir in cilantro and salt and pepper to taste.
    Serves 8.
