Banana Muffins - cooking recipe
Ingredients

1 c. whole wheat flour
1/2 c. unbleached white flour
1/4 c. wheat germ
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. brown sugar
1/3 c. olive oil
1 1/2 tsp. vanilla
1 egg
5 bananas, mashed
3/4 c. chopped walnuts
Preparation

Preheat oven to 350\u00b0.
Grease muffin pan with margarine or use foil muffin papers.
Mix flours, wheat germ, cinnamon, nutmeg, baking powder, baking sodas and salt; set aside.
In electric mixer, mix oil and brown sugar.
Add egg and vanilla and mix well. Add mashed bananas and blend until smooth.
Mix in flour mixture. Fold in nuts.
Bake muffins for 30 minutes or until tester comes out clean.
Serves 16.
