Tuscan Potato Salad - cooking recipe
Ingredients

6 medium potatoes, cooked, peeled and sliced into thick pieces
2 Tbsp. good, fruity olive oil
1 large or 2 small cloves garlic, finely chopped
1 Tbsp. balsamic vinegar
2 Tbsp. finely chopped fresh parsley
2 Tbsp. finely chopped fresh chives
1/4 tsp. salt
1/4 tsp. freshly ground pepper
Preparation

Combine all the ingredients and toss lightly. Allow to stand about 1/2 hour to blend flavors before serving at room temperature.
Serves 6.
