Ingredients

3 egg yolks
1 Tbsp. sugar
1 tsp. baking powder
1 2/3 c. buttermilk
3 Tbsp. melted butter
1 1/2 c. flour
1/2 tsp. salt
Preparation

Beat egg yolks very light.
Blend in the melted butter; add the sugar.
Add the flour, baking powder and salt.
Mix.
Add buttermilk; mix until smooth.
Fold in lightly, 3 egg whites, beaten stiff.
Bake, eat.
They are light and fluffy, but crispy outside.
