Fried Peach Pies - cooking recipe

1 c. flour
1/4 tsp. salt
1/3 c. butter or shortening
2 Tbsp. ice water
2 c. finely chopped fresh peaches
1/4 c. sugar
2 Tbsp. cornstarch
1/4 tsp. nutmeg
1/8 tsp. cinnamon
1 tsp. butter
2 1/2 c. cooking oil
confectioners sugar
Preparation

Combine flour and salt; cut in butter until the particles are mealy in appearance.
Add ice water and work dough until it is a soft ball.
Roll out and cut into 3-inch rounds, using a floured rim of a large glass.
In a saucepan, combine peaches, sugar, cornstarch, nutmeg and cinnamon; cook over low heat, stirring constantly, until mixture is thick and clear.
Add lemon juice and butter, stirring until butter is melted.
Remove from heat and cool.
Place mixture on half the circle of dough; fold empty half over and press the edges together.
Crimp with the tines of a fork.
