Vegetarian Rice Casserole - cooking recipe
Ingredients

1 large onion
2 green peppers
4 to 6 stalks celery
3 tomatoes
1 (10 oz.) can tomato sauce
red cayenne pepper (optional)
basil
olive or vegetable oil
1 c. Cheddar cheese, shredded or sliced thinly
Preparation

Chop the following vegetables in large chunks:
onion, green peppers, celery and tomatoes.
In vegetable oil or olive oil, lightly brown onions and add green peppers and celery.
Simmer and add tomatoes.
Sprinkle a bit of red cayenne pepper and basil over simmering mixture.
Cover and cook down until tender.
Add tomato sauce.
If mixture requires more liquid, add water.
Stir in long grain brown rice and simmer 45 to 55 minutes.
Pour into casserole dish and top with Cheddar cheese.
Broil until bubbly and serve.
