Tomato Chutney - cooking recipe

Ingredients
    1 can peeled tomatoes, chopped
    3/4 tsp. ginger
    4 Tbsp. vegetable oil
    2/3 c. raisins
    1 tsp. cayenne
    1 medium onion, finely chopped
    3/4 c. pitted dates
    1 tsp. mustard seed
    2/3 c. currants
    1 tsp. salt
Preparation
    Place all ingredients except mustard seed and oil in a saucepan and bring to boil, stirring occasionally.
    Reduce heat; simmer, uncovered, until mixture is thick, 1 1/2 to 2 hours.
