Low-Fat Stuffed Potatoes - cooking recipe
Ingredients

2 large potatoes
1/4 c. fat-free sour cream
2 Tbsp. snipped chives
1 Tbsp. skim milk
1 tsp. salt
1/8 tsp. garlic powder
dash of pepper
2 Tbsp. grated Cheddar fat-free cheese
paprika
Preparation

Scrub the potatoes and prick with
a fork.
Bake the potatoes in a 375\u00b0 oven for 70 minutes or until done.
Slice the cooked potatoes in half lengthwise. Scoop out the inside, leaving the shells intact.
Mash the potatoes. Add sour cream, chives, milk, salt, garlic powder and pepper.
Beat until fluffy.
Spoon the potato mixture into each potato shell. Sprinkle tops with cheese and paprika.
Return to oven. Bake 10 minutes or until heated through.
If desired, place under broiler to lightly brown tops. Makes 4 servings.
