Brown Rice Confetti Salad - cooking recipe
Ingredients

2 1/4 c. water
1 c. brown rice, uncooked
1/2 tsp. salt
1 c. thin yellow squash strips
1 c. small broccoli flowerets
1 c. sliced radishes
1/2 c. sliced scallions
1/4 c. chopped fresh dill
3 Tbsp. chopped fresh parsley
1 tsp. grated lemon rind
1/3 c. lemon juice
2 Tbsp. olive oil
2 tsp. Dijon mustard
1/2 tsp. ground pepper
fresh dill sprigs and fresh sliced yellow squash (garnishes)
Preparation

Combine water, rice and salt in pan.
Cook according to package directions.
Remove from heat and cool.
Combine rice, squash strips, broccoli, radishes, scallions, fresh dill, parsley and lemon rind.
Combine 1/3 cup lemon juice, olive oil, mustard and ground pepper in a jar.
Cover and shake vigorously.
Pour over rice mixture.
Toss gently.
Cover and chill 1 to 2 hours. Garnish, if desired.
