Baked Eggplant - cooking recipe

Ingredients
    1 eggplant
    1 c. cracker crumbs
    2 eggs, beaten
    1 can cream of mushroom soup
    1 large onion, diced
    1/3 c. butter
Preparation
    Peel eggplant and dice into 1-inch cubes.
    Cook in salt water until very tender.
    Brown onion in butter.
    Mix all ingredients together.
    Pour into greased baking dish.
    Bake in slow oven about 30 to 40 minutes.
