Refrigerator Bran Muffins - cooking recipe
Ingredients

1 2/3 cup sugar
2 cups boiling water
2 cups bran buds
1 cup all bran
3 1/2 tsp soda
3 cups flour
1/2 tsp salt
2 2/3 cups buttermilk
4 eggs lightly beaten
2/3 cup shortening
1 cup of raisins or chopped dates (optional)
Preparation

Mix the bran with boiling water and let stand while mixing the sugar and shortening with mixer.
Add and combine the buttermilk. Add lightly beaten eggs, mix and then add remaining dry ingredients.
Add raisins or dates if used.
Bake in well greased muffin tins 15 to 18 minutes.
Batter will keep a month or longer in the refrigerator.
