Mushroom Soup - cooking recipe

Ingredients
    1 lb. fresh mushrooms
    1/2 c. onion
    1 c. finely chopped celery
    1/4 tsp. pepper
    2 Tbsp. cold water
    1 c. milk or light cream (half and half)
    1/4 c. grated Parmesan cheese (optional)
    1/2 c. butter or margarine
    1 c. diced potatoes
    1 3/4 tsp. salt
    1 Tbsp. flour
    3 c. boiling water
Preparation
    Wash and slice mushrooms and set aside.
    Heat butter; add onion and saute until golden.
    Add mushrooms, remaining vege tables and seasonings.
    Cover.
    Simmer 15 to 20 minutes or until tender.
    Combine 1 tablespoon flour and 2 tablespoons cold water. Stir slowly into vegetable mixture.
    Add boiling water and simmer 10 minutes longer.
    Before serving, stir in milk or cream.
    Add cheese.
    Do not boil.
