Canadian Cheese Soup - cooking recipe

Ingredients
    6 c. water
    4 Tbsp. chicken base
    1/2 c. finely chopped celery
    2 Tbsp. finely diced onion
    1/2 c. shredded carrots
    1 stick margarine
    1 c. flour
    1 lb. Cheez Whiz
    1/2 c. grated Cheddar cheese
    1 1/2 c. warm cream
Preparation
    Simmer first 5 ingredients for about 20 to 30 minutes, until vegetables are done.
    While vegetables are cooking, mix flour with melted margarine, over medium-low heat, stirring constantly.
    Cook for about 5 minutes, until a light peanut color.
    Slowly pour 2 to 3 cups vegetable mixture into flour mixture, stirring vigorously until smooth, then add this back into the rest of soup.
    Add Cheez Whiz and Cheddar cheese.
    Stir until melted.
    Add warm cream. Makes about 2 1/2 quarts.
